Kamut, Spelt and Rye bread

I have been experimenting with the new flours I got in with my Healthy Supplies parcel this month and am trying to see what I can achieve with the spelt and rye flour.

So I changed the recipe on the back of the kamut flour bag

it stated 500 g flour, so I made this 65% kamut, 25% spelt and 10% rye

so 325g kamut flour
125g spelt flour
and 50g rye flour.
1/2 teaspoon salt
1 teaspoon quick yeast
1 teaspoon sugar
13 fl oz warm water
2 tbsp olive oil


added all to my bread maker and put it onto a basic cycle with a light crust mode.

This didn't make a light a loaf as I had hoped for,but then rye makes a heavier bread anyway. But it did make a loaf which was very pleasant, better suited to savoury than sweet. the crust did tend to come off if you picked it up too near the edge of the sandwich, but the crust remained soft and cuttable right to the end of the loaf.

 If I was to make it again I would add a little bit more yeast to see if it would rise a little bit more.

The flours came from Healthy Supplies but the recipe idea is my own.

  3. this looks really good....I bet a heavier loaf like this would be nice with some walnuts in...I'm drooling at the thought!
