Haribo Muffins

 Fifi was away with mummy to A&E as she had hurt her foot and was limping on it so she went for a check, seems to be ok, but Bob and I decided to make some muffins so we can join in with  The Crazy Kitchen Cooking with your toddler, which has a theme of muffins this month. Your children do not need to be toddlers, I have just been joining in for a while.

We have used fruit in quite a few things lately, so we thought we would try something different, other people have been using a lot of yummy sweets, so I decided we would do the same, cant use nice Cadbury stuff so we used Haribos.

Ingredients

2oz sunolive oil
3 oz coconut sugar
2 oz soya milk
1 large mashed bananas ( as egg replacer)
top up and cook, bubbled out slightly
6 oz gluten free self raising flour

3 or 4 haribo per cake

Mix all the ingredients together except the Haribo.

Half fill each of 12 muffin cases, add 2 or 4 Haribo to each and then add more cake mix on top.

Cook for approx 15 mins at 170oC

Once cool eat and enjoy, beware if eating warm as the jelly sweets are sugary and will stay hot enough to burn for a while.


They made a very nice muffin with a very chewy texture. OH has eaten three so they must be good.

We made double the mixture above and I cooked some in a sandwich tin, then made a jelly with 1/2 pint water and once nearly set added a carton of oatly cream to make a creamy jelly and poured it on top of the sponge. Was fruity and refreshing.
