Mint Aero cakes and Mincemeat Swirls

While I was making the Haggis Spring Rolls  I decide to make a few cakes as well.

Mint Aero Cakes


I made a bog standard cake mix with

4 oz Marge
4 oz coconut sugar
2 eggs
8 oz self raising flour

and stirred through a mint aero that I had bashed up with a rolling pin before I opened the wrapper.

Cook for approx 15 mins at 180 oC

There was no physical sign of the aero time it was cooked but you could certainly taste it.







Mincemeat Swirls

Take half a pack of puff pastry and roll out to a rectangle. Spread across the sweet mincemeat and roll up sausage roll style, Cut into 1/2 inch slices and place on a greased baking tray.

Cook for approx 10 mins at 180 oC







The coconut sugar was supplied by Healthy Supplies but the recipe idea was my own.
