I have been thinking about various recipes for the Jubilee, and have a few ideas up my sleeve. Really I was looking for recipes suitable to either place on a table for a street party but equally as well at home for a picnic, as well as any other time as part of a meal.
First of all I made dough using the dough setting on the bread maker. I made three loaves, all from the same basic ingredients, which were
- 1lb bread flour
- 1.5 teaspoon salt
- 1.5.teaspoon instant yeast
- 1.5 teaspoon sugar
- 320ml water
Loaf 2 - I used Kamut flour (as I prefer it to white) added 4 oz grated cheese, and 1/2 teaspoon blue gel colouring.
Loaf 3 - I used the kamut flour again, and this time added 3 tablespoon tomato powder mixed with 6 tablespoons warm water, 4 sun dried tomatoes soaked for 2 hrs in oil then drained and chopped, and 1/2 teaspoon red gel food colouring.
I liked this idea, as I wanted to use the red, white and blue theme, and these 3 loaves together give a nice balance of flavours between the bacon, cheese, tomato and bacon.
Next up I tried to think of a few less run of the mill ideas as they are for such a historic occasion.
So I took my 3 loaves and split each into 3 pieces. Each piece was knocked back and re - kneaded as per normal.

Secondly I decided to make a plait loaf. For this I rolled out to approx 16 by 8 inches, topped the white with bacon, and rolled them up swiss roll style again, then placed them on a baking tray, and plaited them.

These loaves tasted so delicious, and the flavours compliment each other really well.

ReplyDeletevery easy to make, well worth doing, feel free and copy. just remember the normal food colouring from the supermarkets wont give you the bright colouring, it needs to be a gel
