This is one of the staple foods in our house, it is easy to make, cheap and filling and the whole family can eat it. The ingredients can vary depending on what is in season, or what you have to hand. There need be no set quantities as it really does not make much difference.
I made ours in the slow cooker, but a large pan works just the same.
Peel and chop
Place all chopped ingredients into slow cooker and season.
- 1 leek
- 4 carrots
- 4 medium size potatoes
- 2 sweet potatoes
- an onion
- 2 parsnips
Cut a tin of corned beef into slices or chunks. Add to slow cooker. Add a large handful of frozen peas. Add a tin of tomatoes. Pour over half a pint of boiling water. Put on lid, switch on slow cooker and leave for 5-8 hrs. Serve on its own or with crusty bread.
Any ingredients can be changed or omitted. Any left over freezes well.
