Dairy Free Chocolate Sultana cakes

I have been messing around with different ingredients. One being coconut oil, the new fad everybody seems to be using. The jury is out on its benefits or its badness depending on which sites you read. But it is dairy free and that is good enough for me. 

So I made dairy free chocolate sultana cakes. 


  • 4 oz coconut oil
  • 3 oz half spoon sugar ( or 6 oz granulated sugar)
  • 3 beaten eggs
  • 10 oz self raising flour
  • 2 oz cocoa powder
  • 2oz sultanas

Butter icing

  • 150 g coconut oil
  • 300g icing sugar
  • 1 tablespoon cocoa powder ( sieved together with icing sugar)
  • 2 teaspoon coconut milk



  1. Cream coconut oil and sugar together until well creamed.
  2. Add the eggs
  3. Then the sieved flour and drinking chocolate
  4. And the sultanas
  5. Divide between 18 cake cases
  6. and cook for approx 20 mins at 160 oC

Butter icing

  • Cream coconut oil very well
  • Add other ingredients carefully and mix well.
  • Use to decorate cooled cakes.

          Now before I added the sultanas I decided to use some of the mixture to make a dairy free version of sticky toffee pudding. I found a jar of Hey Boo Coconut caramel sauce. This stuff is amazing, you really need to try it. Not the cheapest but nice for a treat or a special occasion. 

                I simply put some in the bottom of some cup cake cases.and put the cake mixture on top.

                Served them with with soya yoghurt and some sauce that I had heated for ten seconds in the microwave. Why should we have to miss out on pudding all the time?
