Cholesterol free chocolate muffins

Had no eggs last night so as eggs really are not essential in a cake I made some without. I used flax seed as my egg replacer to do the binding job eggs normally do.

4 oz buckwheat flour
7 oz self raising flour
1 oz wheat germ
2 teaspoon baking powder
a pinch of salt
2oz drinking chocolate powder
M&M muffins
3 oz fruit sugar


Mix all dry ingredients together

12 oz soya  milk,
4 oz natural soya yoghurt
2 tablespoon ground flax seed soaked in 6 tablespoon water (soak for 10 mins before you use)
1 teaspoon vanilla extract
3 oz rice bran oil


mix all wet ingredients together.

Add wet to dry and mix together.

I then split the mixture into two halves, added M&M's to one half and half a tin of mandarin oranges to the other. The M&M ones will contain some cholesterol from the milk in the chocolate, but the mandarin ones do not.

These made a very delicious, moist cake, that rose well.
