Been meaning to use the tofu I have in the cupboard for a while now, and had an idea but never got round to it, so last week I eventually did.
First up was Savoury Tofu cakes,
Mash 1/2 packet of tofu, add to a bowl and marinade with flavouring of your choice ( I used a blue dragon stir fry sauce that I had)
Add 1 finely chopped onion to the marinade mix.
Whilst marinade is making peel 2lb potatoes, and boil until soft, then mash. (Normal people may want to add butter and milk here for creamy mash, in my house you get 100% mashed potatoes, nowt creamy about them)
Mix marinade mix with mashed potatoes and shape into "cakes". Top with grated cheese and brown under the grill.
Serve with a green salad or veg of your choice.
Tofu fruit puree.
Put 1/2 packet of tofu into a blender with 2 peeled peaches and 2 bananas. Purée until smooth. Chill for an hr and serve.
Did not try it but this should freeze into lollies for a healthy alternative.
See told you they were simple, and you do not have the texture of the tofu to worry about if any of you family are like mine and not keen on it, cos there is no texture left, just all the goodness.
