Coconut and lemon buns - baking with Fifi

On Monday night whille Bob was cutting out his biscuits I left Fifi making cakes, and she decided she fancied lemon  flavouring in her coconut cakes, who knows why but that's a 9yr old for you.

mixing
she took 

100g brown rice flour
50g potato flour
50g tapioca flour
1/2 teaspoon salt
1 teaspoon baking powder
75g sugar





sieved the flours together, and then added the rest of the above ingredienst and stir




add 125ml sunflower oil
1 teaspoon lemon extract
5 tablespoon dessicated coconut
2 egg replacer egg
1 teaspoon glycerin
mix and add enough soya/rice milk to make a normal consistency.

Place into 24 cake tins and cook for 15mins at 200oC.

we made custard and served them with custard.
