Peel and slice a selection of potatoes and sweet potatoes into wedges.Par boil for six minutes
Meanwhile cut chicken breasts into strips

dip into beaten egg
and toss into seasoned potato flour.
ready for cooking
peel and cut a red onion into rings. Make a seasoned batter with potato flour and water and coat the onion rings.
Lightly spray the potato wedges with oil and place into a preheated oven at 200 oC.
Add the chicken dippers and cook for 20-25 mins.
Deep fry the onion rings until cooked.
serve with veg of your choice.

Little Z loves chicken nuggets so I tend to freeze about a million in one batch! Brilliant recipe...I'll be trying this!
