Egg Free cupcakes

This recipe is from my friend Samantha who amongst other allergens has a daughter with an egg allergy.

Egg Free Cupcakes ( can also be gluten and dairy free using Kamut flour and Soya Marg) 


8oz Self rasing flour 

6oz castor sugar 

6 tbsp sunflower oil  

8 fluid oz cold water  

Sift   dry ingredients into a bowl. Add oil and water and mix to a paste ( hand blender 
makes the mixture lighter)


Cook on gas mark 4/5 for approx 25 mins (or until springy to the touch)

Recipe makes 12 fairy cakes
