Saw this on another blog....and had to try it.

I read quite a few blogs and get some wonderful recipe ideas from them, a lot of which due to allergies I cannot even consider making, but the other day Claire over at Life, Ninja Killer Cat and everything else put a recipe up for Eggless Apple crumble cake and the topping sounded yummy and something I had to try.

The topping was  Crumble up a wheat breakfast biscuit mix it with a little light brown sugar and sprinkle onto the base of the cake tin.

Place the cake tin in the oven for 10 minutes.

I think mine could have done with a minute less, it was a wee bit brown.

Once I had caramelised the mixture I topped it with a layer of a bog standard cake mix but using diabetic friendly sugar substitute, I then added a layer of peeled and cooked apple slices and uncooked blackberries and topped with another layer of sponge mix. Then put it back into the oven until cooked.

The topping was very nice, almost nutty tasting, added a lovely crunch to the pudding. Think when I try it again I may add some coconut just to add a bit of variety.
