Two recipes for National Baking week

I bake every week just about, so how could I let this week go by without putting up a recipe or two in its honour? Trying to work now with low GI sugars and higher fibre for longer lasting carbs to save the sugar rush to make them suitable for a diabetic.






First off was a simple victoria sponge recipe

6 oz dairy free marge
diabetic friendly sugar (equivalent to 6 oz but they all vary)
3 eggs
10 oz self raising flour
2 oz wheatgerm

beat marge and sugar
mix in eggs
add flour and wheatgerm

mix until smooth and cook in two greased sandwich tins for approx 20 mins at 160 oC

I decorated mine with ready to roll coloured icing.





secondly I made a banana loaf.


4 oz dairy free marge
diabetic friendly sugar (equivalent to 4 oz but they all vary)
3 beaten eggs
6oz self raising flour
2 oz oatbran
1 teaspoon cinnamon
3 medium bananas mashed
5 oz sultanas


grease and line a loaf tin.

mix the wet ingredients
mix the dry ingredients
mix both together. dont over beat just combine enough to be mixed.

put into tin and sprinkle top with pumpkin seeds.

cook for 1- 1 1/2 hrs at 160 oC until cooked.

Leave to cool for 10 mins before turning out of the tin.
